Ingredients:

½ cup raw cashews

2 Tbsp oats/oat flour

3 Tbsp almond butter

2 Tbsp 100% maple syrup

2 tsp vanilla extract

1/8 tsp salt

1/8 tsp baking soda

2-3 Tbsp water

3 Tbsp dark chocolate chips

Directions:

1. Soak cashews in warm water for at least 30 minutes (not required, but highly recommended as it helps soften them, making for a creamier cookie dough!)

2. Remove cashews from water and dry off with paper towel. Add all ingredients, except the chocolate chips, into a food processor and blend until to your desired consistency. Start with 2 Tbsp of water, then add the third if desired.

3. Stir in the chocolate chips with a big spoon and enjoy! Refrigerate any leftovers (but let's be honest, there won't be any left).
