Oatmeal Chocolate Chip Pizookies

Servings: Makes 2 Individual Pizookies

Oatmeal Chocolate Chip Cookie

Ingredients:

1 cup quick-cooking or rolled oats

1 ripe banana, mashed

1 Tbsp creamy peanut or almond butter

1/4 cup dark chocolate chips

Directions: 

In small mixing bowl, mix together mashed banana, oats, peanut butter, & chocolate chips. Spread the cookie mixture out evenly into two mini 5" cast-iron skillets sprayed with non-stick spray. Bake at 350 degrees for 15-20 minutes. Let cool for about 5 minutes before topping with a scoop of ice cream & drizzle of melted dark chocolate chips.

Ice Cream:

Ingredients:

1 ripe banana, frozen

1 Tbsp creamy peanut or almond butter

1/2 tsp vanilla extract

Directions: 

Peel banana and slice into 1/2 inch pieces. Place slices onto a large plate and freeze for 1-2 hours. Place frozen banana slices into food processor or Vitamix, along with peanut butter and vanilla extract and blend until smooth. If you prefer harder ice cream, place back in the freezer for about 30 minutes before topping on your cookie. Melt a few Tbsp of dark chocolate chips to drizzle over the top of your ice cream and enjoy!
