Baked Salmon with Lemon Arugula Orzo
You will be amazed at how simple this nutritious, delicious weeknight dinner is to make. This baked salmon with lemon arugula orzo takes just 30 minutes, and makes for delicious leftovers!
Servings: Makes 4 servings
Ingredients
Salmon:
1 lb. (16 oz) fresh salmon
¼ tsp sea salt
¼ tsp freshly ground pepper
Orzo:
1 cup orzo pasta
2 cups reduced sodium broth (chicken/vegetable)
1 lemon, juiced
½ Tbsp olive oil
2 cloves garlic, minced
¼ tsp salt (or to taste)
2-3 cups arugula
Directions
For Salmon: Preheat the oven to 400 degrees F. Thoroughly pat dry salmon fillets with a paper towel. Cut into 4 filets (4 oz each). Season each fillet with salt, pepper, and top with lemon slices.
Line the baking sheet with parchment paper and space fillets evenly on the baking sheet. Bake in the oven for approximately 12-14 minutes.
In a medium saucepan, add oil and garlic over medium-high heat and saute until fragrant. Only for a few minutes, you do not want the garlic to burn.
Add broth and orzo to the saucepan and bring to a boil. Cover, reduce heat, and simmer about 15 minutes or until pasta is al dente. When almost all of the liquid has been absorbed, add juice of 1 lemon and salt and stir well.
Once pasta is al dente, remove from heat and mix in arugula until well combined. Arugula should wilt slightly.
Serve salmon over orzo with a salad or asparagus and enjoy!
