Baked Oatmeal Casserole

Makes 6 servings

Ingredients:

3 cups rolled oats

1/2 cup walnuts, crushed

4 ripe bananas 

2 & 1/2 cups unsweetened almond milk 

1 egg

1/3 cup creamy peanut butter

2 Tbsp maple syrup or honey

1/2 tsp ground cinnamon

pinch of salt

Directions:

  1. Preheat oven to 350°F. Spray casserole dish with nonstick cooking spray. In a mixing bowl, combine all dry ingredients: oats, walnuts, cinnamon, and pinch of salt.

  2. In a separate bowl, mix together the wet ingredients: 3 of the 4 bananas (set one banana aside to slice and place on top of casserole) maple syrup (or honey), milk, peanut butter and egg. Use a mixer (or whisk if no mixer available) to blend the ingredients together. 

  3. Pour the dry ingredient mixture into the wet and whisk together gently until well combined. Pour entire mixture into casserole dish. Distribute the oatmeal mixture evenly. Top with sliced bananas.*

  4. Bake in preheated oven for about 30 minutes, or until inserting a toothpick in middle comes out clean. Serve immediately and feel free to top with a drizzle of honey, more fresh bananas, or chopped walnuts. If reheating leftovers, warm-up in microwave for about 60 seconds. Enjoy!

*Note: If you don’t like the taste of cooked fruit, feel free to cook the casserole first and then add the fruit on top after baking.
