Cranberry Glazed Turkey Breasts

Ingredients:

4-6 turkey breast cutlets (around 4 oz. each)

6-8 sprigs fresh thyme

1/2 cup fresh cranberries

3 Tbsp balsamic vinegar

2 Tbsp olive oil

2 Tbsp honey

2 Tbsp low-sodium soy sauce

3 garlic cloves

1/4 tsp rosemary, dried

1/4 tsp black pepper

optional: 3-4 sprigs fresh rosemary for garnish

Directions: 

1. In a blender or food processor, make your marinade by adding the cranberries, balsamic vinegar, soy sauce, olive oil, honey, garlic, dried rosemary, and pepper. Pulse until marinade is well-combined.

2. Place turkey breasts in a casserole dish, and pour marinade evenly on top. Add the sprigs of fresh thyme on and around turkey breasts. Let the turkey marinate for at least 1 hour in refrigerator. 

3. Preheat oven to 375 and bake for 40 minutes. After the first 20 minutes, use a spoon to scoop some of the marinade mixture on the sides on top of the turkey to keep it moist! Then continue baking for an additional 20 minutes, or until turkey is fully-cooked (~40 minutes total). 

4. Top with more fresh thyme & rosemary for garnish. Enjoy!
