Cilantro Lime Shrimp Bowls
These cilantro lime shrimp bowls are the perfect, quick and easy lunch to make all summer long!
Servings: Makes 4 Servings
Ingredients
1 lb shrimp, peeled and deveined
2 cloves garlic, minced
1 lime, juiced
¼ cup fresh cilantro, chopped
2 Tbsp. olive oil
1 tsp. cumin
1 tsp. paprika
Pinch red pepper flakes
Salt and pepper, to taste
RICE BOWLS
1 cup dry rice (or 2 cups precooked rice)
½ cup canned coconut milk
¼ cup fresh cilantro, chopped
¼ tsp salt (more to taste)
1 cup pico de gallo (store bought or homemade)
1 avocado, sliced
Directions
Prepare rice according to package directions. After rice has been cooked or reheated, add in the coconut milk, cilantro, and salt.
Season shrimp with cumin, paprika, salt, pepper, red pepper flakes, and 1 Tbsp of oil in a large mixing bowl.
Warm oil in a large skillet over medium-high heat. Sauté garlic about 1 minute, until fragrant, then add shrimp to pan.Cook shrimp until pink, about 1-2 minutes on each side.
After flipping shrimp, add the cilantro and lime juice to the pan and mix well. Drain any excess liquid.
Add rice to bowls and top with shrimp, pico, and avocado. Other optional add-ons could be black beans, corn, sliced jalapeños or any other vegetables you’d like.
