Quinoa Stuffed Mushrooms
Ingredients:
1 large portobello mushroom (stem removed)
1/2 cup cooked quinoa
1/2 cup kale or spinach
1/2 cup fresh Roma tomato (chopped)
2 Tbsp parmesan
1 Tbsp fresh basil (chopped)
1/2 tsp black pepper, garlic powder, or red pepper flakes
Directions:
1. Preheat oven to 400 degrees. Cook mushroom in oven for 8 minutes.
2. In separate bowl, mix together 1/2 cup cooked quinoa, 1/2 cup chopped kale, 1/2 cup chopped Roma tomato, 2 Tbsp of shaved Parmesan and 1 Tbsp fresh basil and 1/2 tsp seasonings of choice (red pepper flakes and black pepper).
3. Stuff mixture in mushroom and bake another 12 minutes.
