Vegan Mashed Red Potatoes

Makes 6 servings

Ingredients

2 lbs. red potatoes, diced into quarters

½ cup unsweetened almond milk

3 Tbsp vegan butter (ex: Miyoko’s)

½ teaspoon salt

½ teaspoon pepper

½ teaspoon garlic powder

Topping: chopped fresh chives

Directions:

1. Dice potatoes into quarters and add to a large pot. Fill with enough water that the potatoes are covered by about an inch. Boil under tender, about 20 minutes.

2. Drain water from pot, and add broth and vegan butter to the potatoes. You can use Miyoko’s vegan butter, or sub with olive oil if you prefer. Mash together until the potatoes are smooth, then add in the garlic powder, salt, pepper, and stir. Top with fresh chives.
