4th of July Oatmeal Casserole
Recognize this delicious recipe? It's my baked oatmeal casserole recipe, which has been featured in Fitness magazine, but now with a 4th of July theme! Enjoy this red, white, and blue nutritious breakfast at your next July 4th event!
Makes 6 servings
Ingredients:
3 cups rolled oats
1/2 cup walnuts, crushed
2 Tbsp hemp seeds
1 Tbsp chia seeds
3 ripe bananas
2 & 1/2 cups unsweetened almond milk
1 egg
1/3 cup creamy peanut butter
2 Tbsp maple syrup or honey
1/2 tsp ground cinnamon
pinch of salt
For "Flag" Topping:
3-4 large strawberries, thinly sliced
1/4 cup blueberries
1/2 a banana, thinly sliced
Directions:
Preheat oven to 350°F. Spray casserole dish with nonstick cooking spray. In a mixing bowl, combine all dry ingredients: oats, walnuts, chia and hemp seeds, cinnamon, and pinch of salt.
In a separate bowl, mix together the wet ingredients: ripe bananas, maple syrup (or honey), milk, peanut butter and egg. Use a mixer (or whisk if no mixer available) to blend the ingredients together.
Pour the dry ingredient mixture into the wet and whisk together gently until well combined. Pour entire mixture into casserole dish. Distribute the oatmeal mixture evenly. Top with blueberries, strawberries, and bananas in shape of flag.*
Bake in preheated oven for about 30 minutes, or until inserting a toothpick in middle comes out clean. Serve immediately and feel free to top with a drizzle of honey, more fresh bananas, or chopped walnuts. If reheating leftovers, warm-up in microwave for about 60 seconds. Enjoy!
*Note: If you don’t like the taste of cooked fruit, feel free to cook the casserole first and then add the fruit on top after baking.
