Peach Ice Cream
Makes 4 servings
Ingredients:
3-4 fresh peaches
2 Tbsp honey
1/4 cup plain Greek yogurt or dairy-free yogurt
1/4 cup crushed ice (or about 3 ice cubes)
Directions:
1. Peel and slice fresh peaches. Place in a freezer-safe bag or container and freeze for at least 3 hours (or overnight).
2. Place all four ingredients in food processor and blend until very smooth.
RECIPE NOTES: You can make several modifications to this recipe to fit your liking. If you feel it’s not quite sweet enough, add more honey. If you’d like to make this vegan, swap the honey with 100% maple syrup and use dairy-free yogurt or canned coconut milk. If you have a hard time finding fresh peaches where you live, check the frozen aisles of your grocery store.
HOW TO STORE: Store any leftover ice cream in an airtight container in your freezer for up to several weeks. When ready to eat, leave on counter for about 10 minutes before scooping and serving.
