Parmesan Baked Cod
These lightly breaded and baked cod fillets are a much healthier alternative to the traditional battered and fried version. While we personally haven’t tried these in an air fryer yet, we feel it would make them even more crispy and delicious! Pair these with your favorite pasta or grain and a large side of vegetables for a well-balanced meal dinner in under 30 minutes.
Servings: Makes 4 servings
Ingredients
1 lb. cod
2 Tbsp olive oil
½ cup whole wheat bread crumbs
¼ cup grated parmesan cheese
1 clove minced garlic or ½ tsp garlic powder
1 Tbsp fresh dill (or 1 tsp dried), optional
¼ tsp paprika
2 tsp lemon zest
2 Tbsp. lemon juice
¼ tsp salt
¼ tsp pepper
Directions
Preheat the oven to 400 degrees F. Pat cod dry and cut into 4 (4-ounce) fillets.
In a large mixing bowl, combine olive oil, bread crumbs, parmesan cheese, garlic, paprika, lemon juice and zest, and salt and pepper.
Line a baking sheet with aluminum foil or parchment paper, and evenly space cod fillets on a baking sheet. Top each fillet with the breadcrumb mixture and spread it evenly.
Bake for 10-12 minutes or until the fish flakes easily and the topping is golden brown. For an extra crispy topping, turn the oven to broil for the last 1-2 minutes of cook time.
This fish pairs well with steamed broccoli and quinoa or rice.
