Dark Chocolate Nut Clusters
These were first featured on my website over a year ago on my post about "Sweet Treats in less than 15 minutes" found here, but they're so delicious I felt they needed their own recipe page. These make for a healthy and simple dessert packed with antioxidants and healthy fats!
Ingredients:
Makes 12-15 pieces
2 - 72% Cacao Dark Chocolate bars (I used Trader Joe's, 1.65 oz. bars)
1/4 cup pistachios
1/4 cup cashews
1/4 cup almonds
optional: 1/4 cup any other nuts of choice - I like walnuts or macadamia nuts
1 Tbsp dried cranberries
Directions:
1. In large glass bowl, melt cacao dark chocolate (Nutrition Tip: dark chocolate that is 70% or higher has the most health benefits!) in microwave on Medium power for 2 minutes. Remove, stir, and add additional time if needed until completely melted. Make sure you are melting on medium power to prevent burning.
2. Crush the nuts into smaller pieces and add to melted chocolate. Stir together. Lay parchment paper out flat onto a baking sheet. Pour chocolate and nut mixture onto parcement paper and spread until it is at your desired thickness (I did about 1/4 inch). Save about 1 Tbsp of chocolate to drizzle on the top!
3. Add a few additional nuts, the cranberries and drizzle the 1 Tbsp of chocolate on top. Place in refrigerator for 30-60 minutes. Once completely cooled, break apart into several small pieces. Keep them in a tightly sealed container in a cool place or your refrigerator. Enjoy!
